As Demi Chef De Partie Pastry you will create lasting memories by providing exceptional service and beverage recommendations to all guests that selected Princess Cruises as their vacation getaway.
00a0 u00a0 Key Responsibilities Always carries out production in assigned area/station according to Company recipes and picture presentations as directed by the Executive Pastry Bakery Chef or Chef de Partie Pastry.
Always ensures that assigned section recipe files are maintained and available to assigned staff.
Supervises Commis Pastry in an assigned service station during operational activities as directed by the Executive Pastry Bakery Chef or Chef De Partie Pastry.
Always practices batch cooking/preparation process (for soufflu00e9s, puddings, cru00e8me-brulee, etc.) to eliminate waste.
Demonstrates an ongoing understanding of the ingredient consumption required for daily production and always follows recipes to eliminate waste; always informs the Executive Pastry Bakery Chef or Chef De Partie Pastry when fluctuations occur.
Assists in on-the-job training for new-to-vessel / first-contract Pastry staff in assigned sections as directed by theu00a0 Executive Pastry Bakery Chef or Chef De Partie Pastry.
Continually seeks guidance from the Executive Pastry Bakery Chef or Chef De Partie Pastry to ensure production is executed according to Princessus recipes.
Maintains current, accurate knowledge of public health standards and ensures continuous compliance with all hotel-related Public Health and Food Management Policies and Procedures.
Skills, Knowledge & Expertise Formal qualification in Pastry Arts from a recognized culinary training institution.
At least four years of pastry experience with at least one year experience as 1st Commis Pastry Recent experience in high-volume Pastry production preferably from large hotels/resorts or cruise ships.
Solid knowledge of international pastry recipes and preparation process Solid knowledge of USPH Standards, Food Safety and Waste Management.
Command of the English language, both verbal and written.
Understanding of the foundation of guest service; ability and willingness to deliver outstanding service to our guests.
